Alfredo

Tells the story that the owner of a tourist restaurant in Rome in the 20s called Alfredo, invented the sauce one day in an effort to entice his wife to eat after giving birth to their first child.

Napoli

The Italian word for pesto: pestare, means to hit or crush. The pesto was originally prepared with a marble mortar and a wooden hand. Arrabiata
